Toddy tappers climb wild palmyra palms (no plantation โ€” only wild trees) at dawn to collect fresh sap (neera) in clay pots. Must be processed within hours.

Traditional Boil
Sap is gently boiled in iron or clay vessels over wood fire. The slow evaporation concentrates sugars naturally โ€” no additives, no chemicals, no preservatives.

Cool & Crystallise
Reduced sap is poured into moulds and allowed to cool naturally โ€” forming the characteristic dark blocks of Karupatti (or semi-liquid Panai Vellam).

What is the difference between Karupatti and Panai Vellam?+

Both come from palmyra palm sap. Karupatti is fully crystallised and set into hard dark blocks โ€” it has a drier, more concentrated flavour. Panai Vellam (palm jaggery) is set less firmly and may be semi-soft to solid depending on water content. The nutritional profiles are similar โ€” Karupatti is the fully dried block form.

Is Karupatti suitable for diabetics?+

Its GI of 41 is significantly lower than white sugar, making it a better option for blood sugar management. However, it is still a concentrated source of sugar โ€” diabetics should consume it in moderation and monitor blood glucose response. It is not a sugar substitute for diabetics who need to eliminate sugar entirely.

Why is Karupatti dark/black in colour?+

The dark colour comes from the natural polyphenols and minerals in the palm sap โ€” particularly iron compounds that form during the traditional iron-vessel boiling process. The darker the Karupatti, generally the more traditionally prepared and mineral-rich it is.

How do I store Karupatti?+

Store in a cool, dry place away from moisture. Wrap in its palm leaf packaging or store in an airtight container. It can become sticky in humid conditions. Shelf life is 6โ€“12 months at room temperature.

Is this the same as coconut jaggery or cane jaggery?+

No โ€” Karupatti and Panai Vellam come specifically from the Palmyra palm (Borassus flabellifer). Coconut jaggery comes from coconut palm sap, and cane jaggery from sugarcane. Each has a distinct flavour, colour, and mineral profile. Karupatti is uniquely Tamil and is considered the most nutritionally rich of the three.
